Happy Shavuot!

Happy Shavuot!  Shavuot celebrates the day that Moses received the Torah at Mount Sinai.  It begins exactly seven weeks after Passover (in fact, shavuot literally means "weeks" in Hebrew).

To celebrate we eat delicious dairy meals.  Enjoy your Shavuot with this easy, amazing, no-bake cheesecake recipe!

Ingredients:
20 sheets of graham crackers
11 tablespoons of unsalted butter, melted
2 tablespoons of sugar
2 8-ounce packages of cream cheese, room temperature
1 14-ounce can of sweetened condensed milk
1/4 cup of fresh lemon juice
1 teaspoon vanilla extract

Directions:
1. Place the graham crackers in a large plastic bag and crush them with a rolling pin until they are very fine crumbs.

2. Pour crumbs into a medium bowl; stir in sugar.  Add butter and stir until well combined.

3. Press the crumb mixture into a 9-inch springform pan, spreading it 1-2 inches up the side; press flat.  Chill crust in freezer at least 10 minutes.

4. While the crust chills, you can make the filling.  Beat cream cheese in an electric mixer until it's smooth.  Add the condensed milk a little at a time.  When combined, beat in the lemon juice and vanilla.

5. Pour the filling into the crust, smoothing the top with a rubber spatula.  Cover and refrigerate 2-3 hours.

6. Enjoy!
